Vegetarian chicken salad sandwich! As an added benefit, it’s organic. Which, if you’ve been following along, you’ll know is important to us. You can even use my homemade mayonnaise with this recipe. I shared how to make that with you last week!
Why a Vegetarian Chicken Salad When I am a Meat Eater, You ask…
I came up with this recipe because I wanted a chicken salad sandwich one day and I didn’t have any organic chicken. So, I decided to experiment and see what panir cheese would taste like in place of chicken in chicken salad. It turned out great! A vegetarian chicken salad sandwich! I actually found some organic chicken and made some chicken salad sandwiches with it the other day. I didn’t like it as much as I like this. Crazy, huh?!
This panir vegetarian chicken salad is a cross between chicken salad and egg salad. You can eat it by itself or you can make sandwiches out of it. It is delicious both ways. I usually end up eating quite a bit of it before I finish making the sandwiches, so you may want to make a little extra for this very purpose
Versatility in Action!
When I make sandwiches, I like to add fresh alfalfa sprouts. Sprouts are actually a good addition to many things: smoothies, pizza, eggs, etc. Here is a blog my husband wrote on growing your own sprouts if you’d like to learn how. This is such a fun recipe to make. You can add whatever sounds good to you. I have added pickles, cranberries, celery, onions, raisins, and grapes to it. You can even add nuts, such as cashews or pecans. Perhaps add some diced apples or fresh herbs. It’s all about what you like or what you are in the mood for. This recipe pretty much changes every time I make it. It’s that versatile!

- 1 cup Panir Cheese diced
- 1/2 cup Celery thinly slicked
- 1/2 cup Onion diced
- 1/2 cup Raisins
- 1 cup Mayo
- 1 tablespoon Mustard
- 1 teaspoon Lemon Juice
- 1 teaspoon Sugar
- Salt & Pepper to taste
Ingredients

- Place panir cheese, celery, onion, and raisins, cranberries, or grapes in a bowl.
- In another bowl, mix mayonnaise, mustard, lemon juice, and sugar. Add salt and pepper to taste. If desired you may add a little more mustard or sugar to your liking.
- Gently mix mayonnaise mixture into other ingredients
- Serve on sandwiches, and enjoy.
Note: If desired, you can add nuts such as cashews or pecans, diced apples, or any other stir in ideas you have, to the first step.
Note: You can also serve it on a bed of lettuce, mix it into cold noodles for a chilled pasta salad, or just eat it straight out of the bowl
