Trying to lose weight? Or perhaps just want a lower carb meal? Then here is one for you, Lasagne Soup – THM Style! Not only is it low in carbohydrates, it’s also low in meat. As in zero meat. Yup, it’s vegetarian. NOT vegan, sorry to all of you vegans. It’s really hard to do THM the vegan way. Not to say it’s impossible, just difficult.
Anyway, I digress, let’s get back on track. This is another recipe that I have decided to vegetarianify (spell check is saying that isn’t a word. However, since this is MY blog, I’ll use any word I like)! I’m thinking that you will be finding me posting a lot that are vegetarian meals. Don’t worry, however, if you gotta have your animal flesh, it’s pretty easy to put the meat back in.
So what prompted Lasagne Soup – THM Style?
On Sundays our family almost always eats dinner together. Since Perfection is usually the cook, I thought I’d be kind and give her the occasional day off. Well, I don’t know if you realize, to feed 12 it takes a LOT of food. And I’m used to just cooking for my husband and myself. You do the math. 2 vs 12! Yikes!
Luckily I had been perusing the world wide web for some recipes and I managed to find some great recipes, one of which is found here 🙂 And… it fed a LOT! Woot! A win win situation. Not only did I find something that would feed our big fam, it was something Papa and I could eat and remain faithful to our new plan to eat healthier.
It can’t have been THAT perfect, what gives?
Ok, yeah, it wasn’t all a bed of roses. Actually, it was pretty worrisome at first. My wonder hubby, Papa, likes to help me in the kitchen. He’s a great chopper of veggies. Almost TOO good. I asked him to chop up the cabbage. So he did. A LOT of cabbage. Being busy with something else I told him a bit more was needed. He followed my instructions. Unfortunately, HIS definition of a bit more, and MINE are two totally different definitions!! So, needless to say, I had a LOT of cabbage already added to the pot. This meant I had to add more of the other ingredients to the recipe to make it work 😀
Well, as mentioned, worry time, and continued on. As it came time for dinner, Perfection came over for a taste test. EEK! I mean, after all, Perfection IS perfection! And a perfectionist! But, all was well! She liked it. She suggested a little salt, pepper, and parmesan. And, of course, she was right. Athough, parmesan isn’t a necessity, but it certainly can be added if you like. Salt was the necessity!!
And now, onto the recipe!

- 1 med. onion chopped
- 3 cloves garlic minced
- ½ c. oat fiber
- 1 tsp. xanthan gum I used gluccomannon powder instead
- 6 c. water
- 1 29- oz. can tomato sauce
- ½ med. head cabbage finely chopped
- 2 c. fresh spinach packed
- 1 T. Italian seasoning
- 2 tsp. each oregano parsley
- ½ tsp. black pepper
- Salt to taste
- 2 c. shredded mozzarella cheese
- 2 c. cottage cheese
- 1 c. heavy whipping cream
Ingredients

- Sauté the onion and garlic together until cooked through.
- Sprinkle the oat fiber and xanthan gum (or gluccomannon powder) over the onion mix in a fine layer and stir to distribute evenly.
- Add the water, tomato sauce, cabbage, spinach and herbs.
- Cook until the cabbage is tender.
- Add the dairy ingredients and heat through until the cheese melts.
