Have you ever wanted to make your own homemade mayonnaise? Maybe you ran out and you needed some for a recipe and didn’t have time to go to the store, or maybe you just thought it would be neat to make your own mayonnaise. Whatever the case, making your own mayonnaise is easy to do. And, of course, it tastes great!

Homemade Mayonnaise – Without Egg Yolks?

I have two different recipes for homemade mayonnaise. One of them uses just the egg whites. Knowing some people don’t like to consume raw egg yolks – Such as Handyman – I went on a search for yolkless recipes. Finally, after not being able to find one, I created my own!

I also have a recipe that uses the whole egg, which I found over at Satisfying Eats.

I’ve made both recipes, and they both turned out great. In a taste test, I was told that they were both quite good. The one with whole eggs tastes a little more like mayonnaise. Meanwhile, the one with egg whites tastes a little more like Miracle Whip. They both have the consistency of mayonnaise. I couldn’t decide which one I like better.

Both recipes can be made with all organic ingredients, so you can have organic mayonnaise (if you don’t know why that’s important, check Handyman’s post), which I really like. It can be hard to find organic mayonnaise. And I can’t forget to mention it’s quite expensive, too! You can use other oils in this recipe as well. I like to use extra light olive oil. Because it tastes much better. Trust me, I tried using extra-virgin olive oil and it tasted horrible!

  • 1/2 teaspoon Salt

  • 2 teaspoons Lemon Juice
  • 1 cup olive oil Remember, use extra light olive oil
  • 3/4 teaspooon Mustard This is optional, it gives it a more mayonnaise taste. Instead of the Miracle Whip taste.

  3. Blend until it is the consistency of mayonnaise. It will be very quick, it should be done about the same time you get done adding the olive oil.

Yield: 1 cup
Ingredients
1 whole egg
3/8 teaspoon salt
1 teaspoon mustard
1/2 Tablespoon apple cider vinegar
1 cup extra lite olive oil

1. Add egg, salt, mustard, and vinegar to a blender and blend.
2. While blender is blending at a medium speed, add olive oil very slowly.
3. Blend until it is the consistency of mayonnaise. It will be very quick, it should be done about the same time you get done adding the olive oil.
