We were so tired of using processed flour. Knowing the benefits of whole wheat flour, I really wanted this breakfast favorite to be healthier, too!
With my desire to eat healthier I have been trying to find a whole wheat pancake recipe for a long time. Most of the recipes I found were just like the bread recipes I would find. They called for part whole wheat flour and part white flour. I didn’t want just partial whole-wheat pancakes though. I wanted whole wheat pancakes that I could make with 100% wheat flour.
First things first
First try, substitute all fresh ground whole wheat flour. Yuck, they would turn out to dense, gritty, flat, or just not taste right. It was so discouraging. I actually gave up trying to make whole-wheat pancakes for quite some time. But, after a while, I decided I really needed to try making whole wheat pancakes with fresh ground wheat again. With grand determination, I decided I would just have to create my own recipe.
Whole Wheat Pancakes, Perfected?
It took more than a few tries experimenting with different ingredients. With different measurements of each ingredient. A little bit of this, a little bit of that! Finally it happened! I was able to create a recipe that I was happy with.
These pancakes are actually made with 100% fresh ground whole wheat flour. They are fluffy and taste great too!
Some Tips That Help Make Them Perfect
To make perfect round pancakes, put batter in a squeeze bottle to easily dispense batter. This also makes it easier for kids to help make the pancakes!
Use hard white wheat and grind it on the pastry setting for finer flour.

- 3 c Whole Wheat Flour Fresh ground whole wheat flour
- 1/4 c Sugar
- 2 T Baking Powder
- 1/2 t Baking Soda
- 1 t Salt
- 2 1/2 c Milk Fresh goat's milk is delicious!
- 2 Eggs
- 2 T Oil
- 1 T Vanilla Extract
Ingredients

- In a large bowl mix flour, sugar, baking powder, baking soda, and salt.
- Add milk, egg, oil, and vanilla, and mix until combined.
- Heat a frying pan or griddle to 350 degrees or medium high heat. Spray with cooking spray.
- Pour batter onto pan until desired size for each pancake.
- Cook until bottoms are lightly brown and tops are slightly dry around the edges and bubbles form in the middle.
- Flip pancakes with a spatula and cook until lightly browned.
This is our go to recipe for pancakes with freshly ground flour 🙂 They are just perfect. We like to do a blend of vanilla extract/and almond extract. Thanks so much for posting!
