  1. Preheat oven to 400 degrees F. Grease or line baking tray with parchment paper.
  2. Mix the yeast in warm water until dissolved.
  3. Add honey and oil. Mix and let sit for about 5 minutes.
  4. Add salt and egg. Mix again.
  5. Add freshly ground whole wheat flour, and mix or knead for about 5 minutes. The 4 1/2 cups of fresh ground flour is approximately 3 cups of hard white wheat berries
  6. Immediately divide dough into 12 pieces and shape as desired: For rolls, just roll into balls. For hamburger buns, roll into balls then flatten. For Hot Dog Buns, roll into logs.
  7. Place on prepared baking tray and bake for 7-10 minutes on center rack.
