Potato, Cheese, & Chile Soup

Ingredients
  • 4medium Potatoeschopped into chunks
  • 3cups Water
  • 1tablespoon Butteroptional – its pretty easy to cook without fats, simply add a little water as needed.
  • 1tablespoon olive oiloptional
  • 1 1/2cups Onionschopped
  • 1 1/2cups Capsicumdiced green, red, or yellow peppers
  • 1cup Green Chilescanned is the easiest to find
  • 1 3/4teaspoon Salt
  • 1teaspoon Cumin
  • 1teaspoon Basil
  • Lotsto taste Pepper
  • 3/4 cup Sour Creamor Kefir
  • 1cup Milkany kind will work
  • 3/4cup Cheeseas mentioned previously, any kind will work. Also pack your measurement
  • 2finely minced Scallionsoptional
Instructions
  1. Cook the potatoes in the water until tender. Cool to room temperature.
  2. Meanwhile, saute the onions in the butter and oil for several minutes.
  3. Add capsicum, herbs, and spices, cooking for 5-8 more minutes.
  4. Puree the potatoes in their water.
  5. Add vegetable saute, chilies, milk, sour cream (or, for more probiotics, add kefir after next step), milk, and whisk until well blended.
  6. Heat over low until hot.
  7. Add cheese, scallions, and kefir.
  8. Serve and eat!
