Quinoa Enchilada Casserole – Perfected!
This dish is so versatile. It can be made as a main dish, a side dish, even as a dip for tortilla chips!
Such as black, kidney, or pinto
chopped fresh cilantro or about 1 1/2 T dried cilantro
Such as cheddar, Colby jack, or Mexican blend
Preheat the oven to 350 degrees.
Place all ingredients except 1 cup of the cheese in a greased 9″x13″ baking dish, and mix well. Or you can mix in a large bowl first and then pour into the baking dish.
Sprinkle the remaining cheese over the top.
Bake for about 45 minutes or until cheese is melted, edges are bubbly. You can cover with foil for first 30 minutes of baking to prevent top from getting overcooked.
