Lasagne Soup – THM style
½ c. oat fiber
tsp. xanthan gum
I used gluccomannon powder instead
oz. can tomato sauce
½ med. head cabbage
c. fresh spinach
T. Italian seasoning
tsp. each oregano
½ tsp. black pepper
Salt to taste
c. shredded mozzarella cheese
c. cottage cheese
c. heavy whipping cream
Sauté the onion and garlic together until cooked through.
Sprinkle the oat fiber and xanthan gum (or gluccomannon powder) over the onion mix in a fine layer and stir to distribute evenly.
Add the water, tomato sauce, cabbage, spinach and herbs.
Cook until the cabbage is tender.
Add the dairy ingredients and heat through until the cheese melts.
