Ingredients
  • 1gallon MilkWe use goat’s milk
  • 1/3cup VinegarYou can use lemon or lime juice instead.
Instructions
  1. Pour milk in large pot and heat to 183-185 degrees. Don’t let it get any higher than this.
  2. Keep the milk at this temperature for 10 minutes, stirring often.
  3. With the pot still on the heat, stir in vinegar. The curd should separate from the whey right away. If it doesn’t, add a little more vinegar.
  4. Pour into cheesecloth lined strainer.
  5. Tie the corners of the cheesecloth and hang to drain for a few hours.
  6. Refrigerate when done draining.
